Meatballs in Tomato Sauce Recipe – Cheer and Cherry

Ingredients:

 




Meatballs:

1/2 pound ground beef

1/2 pound ground chicken breast

1 cup fresh white bread crumbs (4 slices)

2 large egg, beaten

2 teaspoons kosher salt

1/2 teaspoon freshly ground black pepper

Olive oil

Sauce:

1 chopped tomato

4 tablespoon tomato paste

1 chopped red sweet pepper

2 thinly sliced carrots

1 chopped onion

2 minced garlic cloves

1 tablespoon olive oil

2 teaspoons kosher salt

Preparation:
Place the ground meats, bread crumbs, egg, salt and pepper in a bowl. Combine all ingredients with a fork. Using hands form the mixture into small meatballs. You will have about 16 meatballs.

For the sauce, heat the olive oil in a pan. Add the onion and sauté over low heat about 3 min. Add the garlic, chopped red sweet pepper, tomatoes and sliced carrots and cook for 5 more minute.
Transfer the sauce into a large cooking pot, add 2 cups of water with tomato paste and salt, and cook on medium heat until boiling. Put the meatballs to the boiling sauce and cook on the lowest heat for 30 minutes, until the meatballs are cooked through and half of the liquid evaporates.

You can serve hot on cooked spaghetti or with mashed potatoes.
