Healthy Grilled Chicken and Feta Salad Recipe
Grilled chicken breast preparation:
2 boneless chicken breasts
Paprika – 1/2 teaspoon
Cumin – 1/4 teaspoon
3 minced garlic cloves
Ground black pepper – to taste
Salt – to taste
Olive oil – 2 – 3 tablespoons
Spray oil – as needed
Preheat grill to high.
Slightly pound each chicken breast with a meat mallet.
Place chicken pieces in a large bowl with spices and oil and mix it until all chicken breasts coated in oil and spices.
Coat the grill with vegetable spray oil
Place marinated chicken breasts on an oiled grill and grill for 4 minutes each side.
Slice grilled chicken breasts into small cubes.
2 medium tomatoes, chopped
4 C. Arugula
½ Onion, peeled and sliced thin
100 gr diced Feta cheese
Diced grilled chicken breasts
¼ Cup Olive Oil
¼ Cup Lemon Juice
Pinch of lemon Zest
Salt and pepper to taste
Add all of the Vinaigrette ingredients together into a small bowl and mix well.
Add all of the salad ingredients to a bowl add the dressing, lightly toss, then taste and adjust seasonings.
